Does anyone have a Paleo friendly recipe for apple cider vinaigrette???

Equal parts oil and vinegar. Add herbs as you see fit...basil, oregano, etc.

I like to do:
2 oz. olive oil
1 oz. ACV
1 clove garlic, minced
Scale as necessary.

Depending on your fat needs, just adjust the ratio of ACV to EVOO. I go minimum 1:1, usually 2:1.
Often I just put the salad in a bowl and mix it as I go. I keep around Celtic sea salt, garlic powder, and cilantro for adding in (that's at my office). At home, I go a bit crazier with the herb/spice additions.
Olive oil and various vinegars are a heck of a sauce for meat too...
If you want to stay really Paleo, fresh lemon juice + olive oil + good sea salt is a nice combo, in similar ratios to the ACV and oil mentioned above. Or you can mix the lemon juice and ACV for something different.

Seconded on the lemon/lime juice. I do that quite often.
