I just finished listening to The Spendid Table on National Public Radio. One of the callers asked for good recipes for venison heart. Part of the response included "you are probably one of 10 people in the country who are interested in eating heart" (if she only knew :D ). In short, the host said that heart is best cooked slow like veal scallopini or really quick like squid. I think they may have a link to the broadcast at splendidtable.publicradio.org for those of you wanting more details.

There was also an interesting interview with Jennifer Ackerman author of Sex, Sleep, Eat, Drink, Dream: A Day in the Life of Your Body. I only caught part of it and for a few minutes I thought they were talking about Lights Out by Wiley and Formby. Definitely need to look into that book!

Heard the show, pretty good. Put the book on my wish list, just finished cooking a heart, it's sliced, in the freezer. Dog is always happy when I cook as he gets the scraps.

Marinate Heart, pressure cook for 80-90 minutes on high pressure, let cool.
