Do you know where I can obtain the nutritional information ethnic foods (specifically Korean) to help measure out Zone blocks (and possibly other info such as sodium content)? Kimchi (aka spiced cabbage) is a big staple in any Korean diet (and mine) and I know cabbage is the core ingredient, but beyond that Iím lost. If you know of anything at all about Korean food in regards to the Zone and Paleo diets, please let me know. Thanks!

Well I imagine sourkraut is about the same as kimchi, both with regards to Zone blocks and sodium content. Regarding Zone blocks, Saurkraut is 1 block per cup (same as cooked cabbage). I think finding anything that looks pretty similar to a given ethnic food will get you close to the real values. For example pumpkin leaves are likely very close to spinach, collards and kale: 2 cups per block.
