Default Nurtion needs for weightlifter who is a manual therapist by trade

At the moment I perform any where form 5-7 hours of ART/Graston work on people all, along with doing ARMY PT( not that rigourous) and 3-4 days of oly lifting with sessions running about 2 hrs typically.
I am trying to get a feel how you would train someone with a demanding job, as I think I am starting to turn for the worst.

At the moment I am eating 3 meals along with PWO meal after lifting. I stick to the paleo gig and usually run around 2-3 pounds of meat, some veg and about 1-2 medium sized tubers/startch for dinner. With banana, grapes or raisins for PWO carb consumtion( usually whatever carbs I have around).
