Sorry for taking so long to reply to this post. Have been busy, plus my sister left today for Dublin for 18months

But in good news, i was able to get my folders back from my computer that crashed and was able to get the zucchini ball recipe for you guys who are interested.

For an image of the recipe you can go to www.paleocookbook.com as it's a recipe included in the book.

Zucchini Balls

285g grated zucchini, ends removed
285g minced beef
1 onion, finely chopped
2 eggs
1tbs fresh dill, finely chopped
1 1/3 cup almond meal
1tsp salt
Dash pepper


Pre-heat oven to 180 degrees Celsius, fan-forced.

In a bowl, mix all ingredients together until well combined.

Roll zucchini mixture into 4cm balls and place on an oven proof tray lined with baking paper.

Bake for 25-35 minutes, or until browned and cooked.

Tried the Pemmican today. Let's just say I'm glad I didn't buy it in bulk.
