Take a large onion, cut into chunks, throw into food processor. Do same with 6 cloves of garlic. Throw in some sumac (easy in my 'hood, mail order if you are far from a city that has a middle eastern market), some cumin, some salt and pepper. A bit of saffron is nice as well.
Mix up well. Then put in 1/2 to 3/4 cups pistachios, and mix until the pistachios are finely ground.
Take the whole mixture, combine with 2 lbs of ground lamb or goat. Throw it in the fridge for a couple of hours.
Then, create a sort of sausage around flat skewers. Cook over hot coals, or under the broiler until done but moist.
Serve with mint, onions, limes as garnish.
