Default Pho with no noodles?

Would Pho with no noodles, only the beef with the broth and some veggies thrown in (no bean sprouts, I don't like them) be okay for the Paleo diet?

It wouldn't be Pho but it would be Paleo.

Just leave out the hoisin sauce as a condiment.

Sounds good to me. I usually ask for extra bean sprouts instead of noodles.

Keep the noodles and add in lots of brisket.
