Scotty,
In a future issue can you give some recipes for homemade salad dressing? My apologies if this has been addressed already.

Neal.
Apple cider vinegar, olive oil, and some garlic, with salt and pepper to taste can be a nice combination.

I usually use 1 of 3 dressings:
- Robb Wolf's Super Sesame Salad Dressing (TM) - Equal parts olive oil and sesame tahini with ginger, curry powder, and pepper.
- Equal parts olive oil and balsamic or red wine vinegar with basil, oregano, and pepper.
- Same as above with the juice from a lime added.

Not sure how paleo this is but this is something I've used in the past that is great on spinach + some berries.
I have the full recipe at home and I'll enter it when I get a chance:
balsamic vinegar + olive oil + honey + any berry jelly/jam

Hi Neal-
It's salads this coming month, so I'll throw in a few of my favorite dressings. All of the suggestions here are great, though. In my day to day life, I usually throw together apple cider vinegar, olive oil, garlic, and basil. (or something similar)

1 avocado, 1/4 red onion, 1/2 green bell pepper, 1 garlic clove, a pinch to a teaspoon of salt, 1/2 cup water (more or less depending on how you like it) and 1/3 cup lemon juice, in the blender. Though usually I just do olive oil and vinegar.

Equal parts fish sauce, lemon juice, sweet basil, fresh cilantro/coriander. Thai style.
