Sweet Potato Pie recipe
Modified from the recipe included on the "Organic Sweet Potato Puree" can, all ingredients are from Trader Joe's:
Creamed (unheated) honey, 1 large heaping spoonful Light coconut milk, 1 14oz. can or slightly less (I used about 8 oz., I wish they had full-fat, but that's what I got) Heat those two on the stove on low heat to just liquify the honey and mix it with the coconut milk. 1 can TJ's organic sweet potato puree (15oz.) 1 heaping teaspoon pumpkin pie spice 1 or 2 dashes of vanilla 2 eggs Mix the sweet potato, spice, eggs, and vanilla in a bowl, slowly/gently to not whip a bunch of air into it. Then combine this mixture with the coconut milk & honey mixture. Prep a pie dish or a 9" x 9" pyrex baking dish with your oil of choice (honestly, I just used a little EVOO spray). Coat the oil with almond meal. Pour in the pie mixture. Bake at 425F for 15 minutes, then reduce heat to 350 for 35-40 minutes. Cool and eat. We ate it while it was still decently warm. If you have an issue with the canned puree, feel free to boil & mash sweet potatoes. I don't have the time, personally... Good stuff! |

Spot on. Any time I'm making BBQ, a quick simple Sweet Potato Pie is included. Use about the same recipe. Tossed in an old banana last time. Amazing how many people like the pie, then say, I've never had it before......... Be well, thanks for sharing. Jay |

I too made it subbing one an butternut squash and one can pumpkin with one total can of coconut milk and the same amount of eggs! And I question you, Dr. G. why did you post that recipe? I know of no self-control with that!! Remarkable! The pie, not me:-)
