What is your take on vinegar?

Wellwe had a big discussion on the CF message board about this. Im not a fan of vinegar because of the acid load. Someone on the message board made the claim that apple cider vinegar is like say limejuice in that the Net Renal Acid Load (NRAL) is basic because of the mineral content. WellI can find no indication that apple cider vinegar has an appreciable mineral content. Until I see something conclusive Id minimize vinegar consumption.

Robb, when you say "minimize" does that mean don't down it by the cup daily or try to avoid it altogether? I enjoy olive oil and organic red wine or organic balsamic vinegar on about half of my salads (2 tbsp of oil, 2 tbsp of vinegar on each salad). The other half get Robb Wolf's Terrific Tahini Ginger Dressing. Just wondering what your take on "too much" vinegar is.

Too much is really relative to the overall acid/base of the diet. I think if you get any type of mouth sore You have teken in too much, but that is just a guess. You can use the values from Loren Cordains site to calculate the NRAL of say a tablespoon of vinegar to see what it it doing to your overall intake.

I'm doubtfull of the cider vinegar mineral content, but hav efound nothing conclusive one way or another. Perhaps the merck manual or the USDA food database?
