If what you're trying to figure out is which fat to use to fuel a workout, MCT (medium chain triglycerides) is great for energy. It's a fat, but unlike other fats does not need to be metabolized by the liver so it is readily available for fuel. Coconut milk and coconut oil are good sources. I like 1 tbsp of coconut oil in the morning or 1/2 hour before a workout. If you do coffee then coffee+coconut milk will give you a good buzz.
