If you're training hard you'll feel hungrier than when you aren't (obviously) so as long as you're making sensible food choices there's nothing wrong with just listening to your body and eating when you're hungry. As far as insulin goes if you're a healthy weight, physically active and eating a healthy diet you don't need to give it a second thought.

There's no reason why you can't achieve your goals while eating a healthy diet. Sumo wrestlers for example develop their enormous bulk by eating a nutritious stew of meat or fish and vegetables called chanko-nabe. They drink quite a lot of beer too which isn't quite so healthy so if you don't want to get that huge apply common sense and adjust your diet accordingly.

The paleo diet isn't necessarily a low carb diet, it's just a different carb diet. As your goals are of an athletic nature I suggest that you buy yourself a good book on sports nutrition such as A Complete Guide to Sports Nutrition by Anita Bean or similar and follow the advice contained therein only replacing the grains and dairy they suggest you eat with paleo foods. In the meantime though you can find some good basic information on sports nutrition here.
