Effect of Grass-fed Beef in Quantity
what would be the likely effect -- blood lipid profile, mass gain, body composition -- of eating around 2lbs of 87% lean grass-fed beef per day along with vegetables and fruits, and the usual healthy fats?
Obviously I would vary the protein content a bit with fish, but let's assume that grass fed beef is the primary source of calories.

I have never looked beyond the how does it make me feel to the actual medical results.
I get in a rut and will eat a couple of pounds of chicken in a day than the next day I will eat a couple of pounds of ground turkey, the next day lean ground beef. I believe I feel better the days that I eat like that than when I don't.

2lbs is probably around 1700-2000 calories depending on the meat. But I'm assuming that having no carbs, the insulin effect is muted, and it should help to build lean mass?

The days that I feed like that I will eat a 4 - 6 oz portion every meal which ends up being 5 to 6 times per day. Lets look at the numbers.
6 x 4 ozs = 24 oz so that is a 1.5 lbs at 6 oz portions it comes out to 36 oz or 2.25 lbs. To get to calories it is 2.25 lbs X 453.59 grams per pound = 1020.58 grams X 4 calories per gram for protein = 4082.31 calories.
I think that is correct but I might have made a mistake as I am pretty fried at work today.

FitDay calculates it at 2559calories, 163grams fat, 0 carb and 254 g of protein. Who's right?
