I just finished reading what I think is the best book I've read on detecting and dealing with food intolerances. The book is Hidden Food Allergies
by James Braly, M.D. and Patrick Holford.
My perspective is that of someone working to deal with food intolerances and allergies. This book brings together in a single source many of the concepts I learned from a multitude of sources and gave me new information. It provides some great explanations of the difference between food allergy
and food intolerance
and how to approach both. It also gives an explanation that was new to me about how the allergic response messes with your metabolism (increases prostaglandin E2 which slows metabolism and, yes, increases insulin resistance
). This is definitely in line with my experience while going through several months of allergy "immunization" shots last year....Not fun, with blood sugar shakiness and crashes, and weight gain...this on top of the itchiness and nausea from the f*&^ing shot itself. The book also talks about how our evolutionary biology affects allergies/intolerances (in short, allergies/intolerances seem to be on the rise because our bodies were not made to eat processed crap, and grains/dairy are recent introductions to our bodies that we are not really adapted to eat).
I think the ideas in this book is potentially helpful to anyone wondering why their diet doesn't seem to be working and for those of you working with clients whose diets don't seem to getting the desired effect.
