I'm not too sure that that would work. The pizza "dough" isn't too much like a normal bread dough. It is heavy, and doesn't really rise like dough.
I have been meaning to experiment with some bread substitutes. In some cases, eggplant can work. (Possibly as dumplings?) I will try to do some experimenting with bread ideas, and hopefully come up with something for the PM eventually. Let us know if you come up with something that works!
