Default ghanian peanut butter soup

A bunch of students here at my work just had some sort of international food potluck, and being the computer help desk guy, i managed to snag some food when i went into the classroom to setup their computer. One of the students made this:

It was really tasty. The chicken was super tender, and the sauce had a nice kick to it. Obviously its not paleo with the peanut butter and regular butter, but i wonder if there is stuff you can substitute for that. I was thinking one of the other nut butters in place of peanut butter, but what could you sub for regular butter? Some sort of oil?

I like to cook chicken in bulk, and this could be a way to make a bunch of tasty chicken that would last a few days.

Could probably sub olive oil and almond butter for the butter and PB, respectively. The rice could be swapped out for something else like cauliflower to fill in the bulk without adding a ton of flavor.

Could just use grass fed butter instead of regular butter...
