How long rest between back squats and how heavy for snatch, c&j, lunge?

You should give yourself enough time to recover between back squat sets that you can make each rep. I would say about 2-4 minutes between reps.

Snatch and clean and jerk you will work up to a heavy single on each, the best weight you can handle for that day.

Should I do the lifts in the order it's listed? Usually I do the oly lifts first and then squats, especially if I'm going for a heavy single.
