As we delve into various uncommon foods this year, I will be featuring organ meats often. We'll start with the heart this month.
Those who are squeamish can always follow this recipe and simply use regular meat. The molé sauce can always be made separately and used in a variety of other ways.

Japanese Mountain Yam

This month's "expand your menu" food is the Japanese mountain yam, sometimes also known as a Chinese wild yam. It's also known as nagaimo. This tuber is known for its immune enhancing and anti-inflammatory properties. Mango Sweet Potatoes

Time: 10 minutes• 2 sweet potatoes, peeled and diced• 2 cups frozen or fresh mango, diced• 1/4 cup coconut flakes• balsamic vinegar• sea salt to tasteAdd the sweet potatoes and mango to your pressure cooker along with 1/4 cup of water. Here is a simple slaw using fresh blackberries. I like to pair this with some protein and use it as a post workout meal after a workout with a low glycogen demand. A grain-free pie! Not only that, no omega-6 fats. Look for tapioca spring roll sheets in the Asian food section of nearly any grocery store; just be sure tapioca is the only ingredient besides salt and water.
