Beef Heart Mole
Scott Hagnas  |  April 1 2012  |  Entrees
As we delve into various uncommon foods this year, I will be featuring organ meats often. We'll start with the heart this month. Those who are squeamish can always follow this recipe and simply use regular meat. The molé sauce can always be made separately and used in a variety of other ways. Time: 3 hours • 1 beef heart (grassfed) • 1/2 onion, chopped • 1-2 cloves garlic, minced • coconut oil • 1 tsp cumin • 1/2-cup apple cider vinegar • ...

Japanese Mountain Yam
Scott Hagnas  |  February 28 2012  |  Sides
This month's "expand your menu" food is the Japanese mountain yam, sometimes also known as a Chinese wild yam. It's also known as nagaimo. This tuber is known for its immune enhancing and anti-inflammatory properties. Mountain yams are easy to find in any Asian market. They peel very easily, but you'll then find that the yams are very slimy or mucilaginous. Hang on to the tubers and your knife carefully! Don't worry - once cooked, the sliminess is gone and they are delicious.Time: 25 mi...

African Smoke Lamb Chops
Scott Hagnas  |  January 31 2012  |  Entrees
When traveling, we always like to stay in extended stay hotels where there is a rudimentary kitchen. This saves time, and makes eating well cheaper and easier.Coming up with good tasting recipes while traveling without spices can be a challenge. This recipe is a simple idea making use of 2 ingredients to make a delicious meal on the road. I used a pre-mixed spice blend available in most areas, as I had no spices on hand. Not traveling? Use this idea anyway for a fast meal at home.Time: 10 minute...

Carrot & Blackberry Slaw
Scott Hagnas  |  September 1 2011  |  Sides
Here is a simple slaw using fresh blackberries. I like to pair this with some protein and use it as a post workout meal after a workout with a low glycogen demand. The molasses add flavor, plus it’s a rich source of manganese and magnesium.Time: 3 minutes• 1/2 bag of shredded carrots (or ~2 cups if you shred your own)• 3/4 cup blackberries• 2 tsp molasses• 2 tsp balsamic vinegar• sea saltAdd all of the ingredients to a bowl. Mix well.Nutritional info: 1 serving at ...

Blueberry Pie
Scotty Hagnas  |  July 28 2011  |  Desserts
A grain-free pie! Not only that, no omega-6 fats. Look for tapioca spring roll sheets in the Asian food section of nearly any grocery store; just be sure tapioca is the only ingredient besides salt and water. I also used dextrose instead of sugar to keep the fructose content of the pie low.Time: 40 minutes• 1/2 package of tapioca spring roll sheets• coconut oilFilling:• 4 cups blueberries• 1 Tbsp dextrose• 1/2 tsp cinnamon• 1/4 tsp cloves• 1/4-1/2 tsp sea salt&...
