Here is another spin on the Performance Patties from issue 1 of the Performance Menu.

Time: 15 minutes

• 1 can Wild Alaska Salmon (Trader Joe's)
• 1/2 cup chopped leeks
• 2 cloves minced garlic
• 4 Tbsp Zataar (Find this at Middle Eastern markets)
• 1 egg
• coconut oil

Heat a bit of coconut oil over medium heat . Add the chopped leeks and garlic, saute until they have become soft. Transfer to a medium bowl.

Add the salmon, egg, and zataar to the bowl. Mix well, then form into 4 patties. Return the patties to the skillet, cook for about 3 minutes on each side. Use caution when flipping the patties. Serve hot, or save for later use.

Nutrition/Zone info: 4 servings at 2/3 carb block, 5 protein blocks, 5.5 fat blocks (7g carb, 33g prot, 16g fat)" />

These were yummy!!! I ordered Zataar on the internet based solely on your recipes (no international markets in our neck-of-the-woods) and this is the first I've tried. Will definitely try the Zataar chicken as well. Thanks!

Paula - TJ's only sells one size - if I remember right, it's 15oz or so. It's the larger sized can, for sure. You can use whichever brand you like; just compute your protein from the label.

Just so you know: horses used for the prtcodoiun of horsemeat are not raised for that purpose, unlike cattle, sheep and pork. You cannot buy young horse meat . All horse meat you buy is old horse. There's a reason for it: because of the extra lean qualities of horse meat, it is very tough and nearly inedible when the animal is in its prime, but as the animal approaches the end of its life, the meat gets better.So, in a sense, eating horse meat is considerably more ethical than eating cow, or pig, or sheep, all of which are raised from birth to be eaten, and are killed either in their youth or their very early adulthood, for food.The horse meat you eat is from an animal that lived a long, fulfilling life.And a coincidence: we had horse meat burgers last night for supper. They're delish.
